Cranberry Choc Protein Balls

A couple of years ago I had a whole heap of nuts and dried fruit at home so I  got my food processor out and started experimenting! I ended up creating these cranberry and choc protein balls.

They have become a favourite amongst family and friends so I thought I would share the recipe…

 

Cranberry Choc Protein Balls

Gluten Free, Dairy Free, Refined Sugar Free, Egg Free

Ingredients

– 1 cup walnuts
– 1/3 cup almonds
– 160g dried cranberries (I use organic cranberries sweetened with apple juice concentrate)
– 170g deseeded medjool dates
– 2 Tbs Protein Powder (I use Vital Pea Protein Vanilla Powder)
– 1 Tbs Cacao powder
– 5-10 drops of vanilla flavoured Stevia liquid (depending on how sweet you want them)
– 2 Tbs fresh lemon juice

Method

1. Put all ingredients into a food processor.
2. Process for about 3-5 minutes or until mixture is combined and smooth. (If you prefer a crunchier texture don’t process as long)
3. Roll mixture into small balls and place on a tray with baking paper and put in the fridge for at least 2 hours to harden.
