Eat Your Greens Quinoa Salad
This quinoa salad recipe is one I threw together one night when I didn’t have much in the pantry or fridge and it ended up being a big hit so I make it a lot now. Sometimes it’s hard to eat the right amount of greens each day and this salad definitely packs the green veggies into it! Even my little boy loves it! It’s so simple and easy to make and can be made as a side dish or eaten on its own. There’s no reason to limit the greens that you put in there, you could add spinach, kale or even bok choy to name a few…

Eat Your Greens Quinoa Salad
Gluten Free, Dairy Free, Refined Sugar Free, Egg Free, Vegan
Ingredients
– 2 cups of Quinoa
– 3 cups of water
– 1 broccoli head chopped into florets
– 2 cups of snow peas or green beans (or both!) cut in halves
– 2 zucchini cut into cubes
– 1 cup of peas
– 2 Tbs dried mint
– 1 lime, juiced
– 1/4 cup of roughly chopped raw almonds
– salt and pepper to taste
Method
1. Rinse quinoa under running water and then place in a saucepan with 3 cups of water and bring to the boil. Reduce heat to low. Cover and simmer for 10-15 minutes or until all the water has been absorbed and the quinoa has become translucent.
2. Place all vegetables in a steamer and steam until just cooked.
3. Put cooked quinoa in a large bowl, mix through the steamed green vegetables, dried mint, lime juice, salt and pepper and chopped almonds.
4. Toss together and it is ready to serve
When I’m in a hurry I have cooked the quinoa in the bottom of my steamer where the water goes and cook my veggies in the steamer above it so they all cook at the same time and the vegetable juices flavour the quinoa. If you choose this method you will need to make sure you remember to check the quinoa regularly to make sure there is enough water in the saucepan and that it hasn’t cooked before the vegetables have finished cooking.
