Summer Breakfast Bowl
Here is the recipe for one of my favourite breakfasts to have on a nice sunny Summer morning…
Summer Breakfast Bowl
Gluten Free, Dairy Free, Refined Sugar Free, Vegetarian/Vegan, Egg Free
Ingredients
– 1/3 cup of chia seed pudding recipe (you will find the recipe here)
– 1/4 cup raw walnuts
– 1 Tablespoon coconut flakes
– 1/4 cup raw almonds
– 2 Tablespoons sunflower seeds
– 1 dollop of coconut yoghurt
– 1 peach sliced
– 1 nectarine sliced
– 1/4 cup fresh blueberries
– 1 banana sliced
– 1 fresh mango sliced
– 1/4 cup raspberries
Method
1. Arrange sliced mango, peach, nectarine, raspberries, banana and nuts around the inside of a bowl leaving an empty space in the middle of the bowl.
2. Scoop out 1/3 cup chia seed pudding from the already made mixture which has set and is chilling in the fridge. Place this in the middle of the bowl in the centre of the arranged fruit and nuts.
3. Next place a dollop of coconut yoghurt on top of the chia seed mixture and then scatter with the blueberries, coconut flakes and sunflower seeds.
You can use any seasonal fruits for this breakfast bowl.
(Just as a little treat for my husband, I drizzled a little coconut nectar on top just before serving!)
