Chia Seed Pudding Jars

Chia seed puddings seem to be the in thing at the moment so I thought I would attempt to make my own mix and see what happened. The results were yummy and filling and we regularly have the puddings for a snack or breakfast now.

I usually make the chia seed puddings in a small jar but the mixture could be made in a bowl or small container. I choose to make them in a jar so they are easy to grab and eat on the run but they also make a great snack for work.

 

Chia Seed Pudding
Gluten Free, Dairy Free, Refined Sugar Free, Vegetarian/Vegan, Egg Free

Ingredients

(I use 250ml jars when making these puddings. This Recipe is for one 250ml jar)

– 2 Tbs chia seeds
– 2 Tbs Organic activated plain buckinis
– 1/2 Cup unsweetened almond milk (You can use any milk you like)
– 3-4 drops of vanilla flavoured Stevia liquid (or sweetener of choice)
– 1 Tbs plain CoYo Coconut yoghurt (You could use any yoghurt if you can have dairy)
– 1/3 Cup fruit of choice (I use frozen berries, fresh mango pieces or unsweetened peaches)

Method

1. In a small jar combine chia seeds and buckinis.
2. Add milk and stevia liquid and mix all together. (It’s very important to mix otherwise the seeds stick to the bottom of the jar and become hard).
3. Place the dollop of coconut yoghurt on top of the mixture.
4. Top with fruit pieces and cover with a lid.  (At this stage you may want to mix all ingredients together or leave to set as layers)
5. Place in the fridge for at least 2 hours. (I sometimes leave mine overnight).

Chia seeds will start to expand in the liquid to resemble a gel-like consistency so do not over fill the jar or mixture will become very thick.
You could add chopped nuts, dried fruit, choc chips, mashed banana… the list is endless. Just experiment and find what you like best!
